Our Food and Beverage outlets are in an extremely competitive market, both from other

International Hotels and local freestanding restaurants. Creativity and strong marketing sense will be of utmost importance in 2004.

我们的餐厅正处于一个竞争十分激烈的市场,这些竞争来自于其它国际性的饭店和本地酒店。创造性和强烈的市场感知力在2004年的餐饮经营中极其重要。

2004年雷迪森餐饮部经营的目标是:通过有个性的餐饮推广活动让" 雷迪森的餐饮品牌走向成熟" ,通过2003年的经营运作,雷迪森酒店餐饮部各经营区域,都业已形成自已的经营主题和品牌,随着杭州的进一步开放,各种国际品牌的酒店纷至沓来,索菲特、东方豪生、利星凯悦、皇冠假日等都已登陆杭城,而且现在杭州的餐饮经营外部条件、市场条件也日趋成熟。2004年对雷迪森酒店餐饮业而言,是进一步巩固品牌,不断进取、面向市场的时候了。在新的一年开始之际,我们的经营务必要立足于勇于创新,开拓进取、不断总结经验,向着创造优质产品、满足顾客需求、创造餐饮名品精品企业方向去努力。全年核心工作为三个方面: 确立各餐厅核心产品,明确其产品特点,具体特点为: 夏宫餐厅:

位于酒店四楼的“夏宫”,一直以正宗地道的潮州菜肴闻名杭城,尤其擅长制作潮汕特色鲜明的高档海鲜菜肴。新千年年初首家邀请香港大厨在杭州推出“鲍翅参肚”豪华菜式,掀起的“鲍翅风潮”引得杭州以及周边无数同行的跟风;2001年,“夏宫”又在杭城首家引进著名的北京官府“谭家菜”系列,再次在杭州掀起“官府菜”风潮。品位尊贵的“夏宫”尤其注重高贵菜式的品质,不仅一直坚持聘用香港厨师主理,所有的高档材料全部是从指定的翅鲍商行中直接采购,四年多年来的苦心经营,终于使得“吃鲍翅,到夏宫”成为杭州高档食客的共识。

特色菜肴:

2003年尾牙全新引进登场的“碳火鲍鱼”,由号称“王子鲍鱼”的香港大厨阿福最新研制开发。这款菜肴的原料必须用“梁记”老师傅仔细挑拣出来的极品十头鲍鱼,然后在特别配方的汤料里以炭炉煨制48小时,成品鲍鱼金黄饱满,自然的香味非常流畅。这道菜肴上桌前,大厨现场以抹油利刃将鲍鱼开片为5份,完全展现职业烹鲍大师的刀功魅力,同时也弥补了极品南非鲍鱼肉炙偏硬的美中不足。这道菜肴同期在香港由阿福的师弟在某知名海鲜酒楼上市时,媒体绘声绘色的包装使这道菜肴充满了传奇色彩。所以餐厅以适合杭州市场的价格推出这道菜肴后,使前来用餐的几位香港客人竟然激动的大呼小叫。

花港餐厅:

这个餐厅被分为两个部分,位于二楼的是风格清新雅致的大厅和雅座,位于三楼的是装修时尚豪华的包厢区域。“花港”餐厅一直以经营口味清淡、风格素雅的江浙本地菜肴和“谭府菜”系列而被众多食客认同,还多次联手各地的五星级酒店厨师,举办了充满异地特色和风情的多种地方美食节,让喜欢特色菜肴的食客们过足瘾头。

特色菜肴:

脱胎于北京谭府菜的“黄焖鱼翅”,选用地道的“吕宋黄”整翅,先用冷、热火泡透发透,然后把鸡鸭火腿高汤和12种北方特产药材及8种南方特产药材一起熬制,同时加入行政总厨谢师傅特别秘方制作的“招牌调料”,以文火炖制6个小时,待各种配料的精华悉数浸淫于翅内后方成成品。这道菜肴口味浓厚甘醇,香鲜滋润,是干燥季节的滋补圣品,也是近日港台地区最流行的一款鱼翅菜肴。实惠实在的花港“鸡煲翅”更是该餐厅胖大厨顾师傅的绝活,引得不少食客隔三差五地前来嗟食。

绿荫咖啡厅:

位于酒店二楼的“绿荫”咖啡厅氛围幽雅,空间广阔,充斥了各种新款厨具的半开放厨房更是

杭州一绝。“绿荫”除了聘请欧洲著名艺术家对餐厅的装饰、布臵和情调进行专业的设计外,还特别邀请经验丰富的英国餐饮名师担任行政大厨,还得到过许多外籍专业“美食家”的交口称赞。“绿荫”咖啡厅还有一个最大的特色;每月都有不同主题的自助大餐。

特别推荐:淹渍72小时的古式烧烤牛排、传统德克萨斯秘方猪排、美国西南古老烧烤菜肴系列,是该餐厅的拿手好戏,也引得许多固定客户驻足长留。

华伦天奴餐厅:

杭城罕见的一家传统式意大利零点餐厅,主要提供口味地道,品质正宗的意大利菜肴,同时提供世界各地的丰盛美食。这个设计精巧、氛围独特的小西餐厅里,比食物更加出名的是风格独特的用餐环境:餐厅就在曲线流畅的室内游泳池边,既时尚又浪漫。

2004年对于餐饮部来说,经营形势非常严峻。餐饮市场的竞争更为激烈。我们要完成酒店下达的经营任务,

不仅要在营销计划、经营策略、提高菜肴出品上下功夫,更要在员工的培训上投入一定的精力和时间。重视员工

2004 is a difficult year to F&B department because we shall face crueler competition. So we should not

only pay attention to the plan making, dish presentation, but also to the staff training. We made following 2003

training plans.

1、对全体厨房员工进行培训 training to every cooks

● 对基础的烹调知识、卫生、菜肴新理论培训

● 提高菜肴质量、规范操作程序的培训

5.3 新员工的培训任务;

5.5、积极配合酒店人事部组织的各项培训工作,参加集团公司和酒店组织的各项培训和竞赛工作;

Cooperate with Training Department and take part in the assorted training and competition from Group Company and Hotel.

5.6、在实际工作中,根据实际经营的需要,适时地增加一些内容。同时,将邀请其它部门的总监及专业人士作培训;

Add some training contents according to the reality. At the same time, we will invite the directors from other department or experts for further training.

5.7、计划组织餐饮部管理层和表现优秀的员工,去参观上海、北京、深圳特区的酒店、以获取新的知识,提高业务能力。

Plan to arrange some management and excellent staffs to visit the hotel in Shanghai, Beijing and Shenzhen for fetching the new information.

5.8、组织员工在通过2004年一系列的培训,进行考核,以使员工能真正掌握与运用这些服务的技能,体现到酒店倡导的―尽善尽美‖的服务中去,使我们的顾客能真正体会到雷迪森与众不同的温馨服务。从而使他们成为我们忠实可靠的客户。
